Egg Frittata


12 Organic Eggs
Sea Salt and Pepper (to taste)
Coconut Oil (to coat pan)
1 Onion (chopped)
2 Bags of Organic Spinach (cleaned, drained, chopped)
1 Organic Red Pepper
1 Cup of Mushrooms (chopped)
1 Cup of Cherry Tomatoes
¼ Cup Fresh Basil (finely chopped)
½ Cup Goat Cheese (crumbles)


Preheat oven to 400 degrees
Crack eggs in a large bowl and mix with a sea salt and pepper
Saute onion in coconut oil until soft in a large fry pan that is also oven safe.
Add peppers, mushrooms, tomatoes, basil
Stir in the spinach and cook til just wilted
Pour eggs into the vegetables and herbs, spices.
Cook on the stovetop over low heat for 5 minutes.
Add goat cheese.
Move pan into the preheated oven and cook til the eggs are thorough in the middle.
